  1. So after reading the first article it got me thinking about more game meats. That’s where I found the second link about some different game and found it quite interesting. I guess I knew that bison was a healthier substitute for beef but didn’t realize that elk kangaroo and pheasant are also rising in popularity. The whole Umami is a trend all in its self that is gaining all sorts of popularity. People want to be wowed these days and are getting tired of the same old chicken pork beef and fish. They want to try something new exciting and healthy, these game meat alternatives Is something that can do both.
    The new creations or dishes using new ingredients, is something that is driving the popularity of food. People are experimenting and trying new things, lobster mac and cheese is everywhere these days, onion rings and eggs on top of burgers are my favorite toppings, and even the idea of pheasant ravioli sounds delicious!
    I would probably never try the kangaroo on a menu, but some of these other new items sounds pretty appetizing. I would like to see what top chefs are preparing and am excited to see the next hot dish of the year is.

  2. The concept of the foodie is changing this is very true nowadays people are willing to try anything as crazy as it may sound and this is a big part of what food is becoming. It seems that were looking for better food and more sophisticated food. People are loving the idea of going to a bar and being able to enjoy a perfect fresh sandwich or a great wrap of fancy salad. This is what trendy young chefs are striving for nice comfort food with flair.
    Speaking of flair game is definitely the next big thing its relatively inexpensive and healthier than the regular meats we consume everyday. The key to being able to sell game meats is that you need to have someone in the establishment that knows how to work with game meats and knows how to prepare them at their best. Personally in L'espalier, we work with a number of game meats and poultry like venison, hare, grouse, pheasant, partridge, guinea hens and quails. They are all amazing and have tremendous potential to become very popular as peoples palates become more refined and open to new, healthier flavors and textures.

  3. I am a really picky eater so I have never tried game, but from reading this article and working in the restaurant business it seems to becoming more and more popular. With everyone watching their weight as much as possible this is just another way to lower your cholestoral and enjoy good food at the same time. People are becoming more adventurous with their food and will almost try anything. There are numerous shows on TV where the host travels the world and tries all sorts of food, including different game that is popular in other countries. My restaurant just started selling buffalo during this past summer and people ordered it due to curiosity or from already having it and liking the meat. I see this definitely being a trend and not a fad.

  4. It is actually really ironic to me that you posted this article, because I was just dicussing this the other day. Last year, I attended Anthony Bourdains lecture here at JWU. I found it to be extremely interesting. He talked about how any individual may enjoy Penne ala Vodka, but it takes a good chef to enjoy things such as tripe, or cow hoof, because you need to prepare it properly. Basically he said he will go anywhere and try anything, and almost ANYTHING can be made edible, and be enjoyed, if you know how to properly prepare it.

    I personally have only tried deer, and I actually enjoyed it. The only thing i thought was strange was the Kangaroo, I dont know if I could bring myself to try that. I do believe that people are willing to try many things as long as it is prepared in an appealing way.
