I must say I love this article! (Because mine was on the same thing) but is just goes to show that this is a hot topic. People all over the world love this idea of organic sustainable food. This is going to be one of the trends that we see for many years to come. Its going to stay this way because both the consumers and chefs can identify that it is both a healthier, superior, more flavorful and higher quality product. These facts alone make these items a must have on all fine dining menus, and unless chefs want to down grade the quality of their food, they will not be going back to conventional produce. Overall I like this article; it talks about one of the biggest movements to hit the world wide restaurant industry in years. The best part about organic sustainable produce is that it is a healthy meal that tastes great. Organic food is definitely a hot trend for the years to come. I know with the restaurant I work at we are always trying to use organic food and incorporate them as much as possible. With everyone wanting to eat healthier today, organic food is the way to go and it is more sustainable as well. These food items contain plenty of flavor and quality, which is what separates the top fine dining restaurants from the mediocre ones. Also, I found it interesting when they talked about organic coffee, beer, wine, and spirits. I always think of food when I think of organic, but clearly restaurants are doing everything now a days to be one step ahead of their competitors. Our restaurants in the group I work for have not got into the organic beverages yet, but it will be interesting to see when they do. This is a trend that I think will stick around for awhile. Why wouldn't it? It is healthy and contains better quality and flavor. Chefs seem to love to work with organic food and try all different types of menu items. I see this as being one of the top trends for years to come.
This was a great article, we all know organic food is one of the top trends of 2010 and obviously we all know why. Chefs will go on and on about the wonders of organic and the appeal of having an organic menu is great, especially if you want to charge top dollar for your food. There is one thing that concerns me about this whole organic movement is that in this struggling economy it is vital to keep your food cost low in order to keep restaurants afloat. It seems that all organic restaurants are pretty expensive and I think its a shame that for someone to have a healthy and flavorful meal we all have to pay a good amount of money for it. Again but if this whole thing is catching is because maybe people are willing to pay for quality. In this whole article it doesn't even mention peoples reactions to these expensive produce so it seems everyone is happy with the fact that they are flavorful and great for you. The question is if organic produce will maintain its popularity because of its health benefits or will people get tired of paying top dollar every time they want to go out for a bite to eat.
This article being so similar to Dan's just shows us the importance of this trend. It did come as quite a shock to me that Austrailia is so involved with organic foods. Any restauranteur in today's market needs to seriously consider the use of organic products. Afterall, our industry is about what our guests want, and right now organic is it.
