I think this article really sums up everything we talk about in class. Once again we see that organic foods are becoming more and more popular. The trend that jumped out at me was the vegetarian foods...This is something that us non-vegetarians may not always think about. Most places offer a couple vegetarian items, but with this demand rising, we need to keep up with the trends. Offering a wider selection of vegetarian items opens up an entirely new market for the restaurant. Also, the advertisement again shows us the uprise of blogging, and social media. This can be HUGE to our industry, and cut advertisement costs. Technology is the future, and we need to keep up with that. People these days are more likely to read a newpaper online, then to go out to the store and buy one. All these trends are important to look out for, and accomodate our guests needs.
This article really sums up some of the main trends we are experiencing in the industry. Everyone is putting so much emphasis on locally grown food and organic foods it’s really here to stay. Social media is the other big trend, with all the new websites and blogs that are being created, small independent restaurants really don’t have any need for a marketing department, more and more places are using managers to get the word out about their establishment and are using less T.V. and radio. Vegatarian meals are something too that has peaked my interest. Working in a restaurant it is always a struggle to come up with a good vegetarian meal, that’s why when we saw that video in class today about the chef who braises watermelon it really got me thinking. Vegetarian meals don’t have to be boring anymore, they want exciting and delicious meals too and it opens the door for chefs to be creative. They way we eat is changing and for chefs and restaurants to survive the have to keep up with the trends.
It is always interesting to see what people think the trends are going to be each year. The locally grown produce and organic food seem to be on everyone's lists, but its the other trends that not everyone has that makes it interesting. Vegetarian food definitely surprised me and I don't really see this as being a trend. I think it is always good to have an item or two on your menu for those who are vegetarians or to have ingredients on hand to make a quick meal for someone if they don't want meat. Although, this being the United States I don't see this becoming a hot trend and for people to stop eating meat. We will see I guess. Either way it is always fun to see what people say and think is going to happen each year.
Its intersersting to read everyones versions of trends for this upcoming year. There is always different oppinions and the few trends that are maybe a little akward but of course there is the few that stand out. The organic food, healthy lifestyle etc... The restaurant that I work now is very up to date on their trends and on customer feedback though blogs like this, facebook and twitter. We are definately supporters of your local, organic produce that is actually brough to us by our restaurant owners' farm in northern Massachussets. We offer several small desserts instead of one large one and we are starting to embrace the need for vegeterian dishes on the menu. (this particularly drives us crazy!! Were a French restaurant for God sakes!! Duck fat, foie gras and meat is what we do best!!) But of course this is what people want and they are the ones that bring the money. We cannot think that we can cook however we feel like it, its all about balance and giving the customers what they want. It is important to keep up with trends and always stay ahead of the game or it will pass you by!
